Mix garlic powder, smoked salt, and ground pepper into a bowl and cover all parts of the beef roast with a thick layer. Marinate beef roast for 2 days in the fridge
Pre-heat oven to 300 degrees
Peel and then french fry cut the carrots. Cut onion into half-moon slices. Put beef roast on a cookie baking sheet and surround it with the carrots and onions
Insert oven-safe thermometer at the top of the beef roast and set the ideal temperature to 130 degrees fahrenheit for medium rare. This will take about 4-5 hours
Remove roast from oven and put a foil tent for about 30 minutes
Before serving, remove foil tent and broil for 10 minutes.
